Make Your Own Vinaigrette in 2 Minutes

    September 10, 2021 / 4 Comments

One of my favorite things to make at home is salad dressing. You may have read my past post about my all-time favorite Magic Sauce dressing recipe. While I love Magic Sauce, it has a lot of ingredients, and I don’t always feel like getting the blender out to make it (no matter how much I love my blender). Thank goodness for vinaigrette. No matter what the situation, if you have oil, vinegar, and a bottle to put it in, you can make this tangy and delicious dressing or marinade. I’ll be the first to admit that store-bought bottled vinaigrettes are super convenient and come in all kinds of creative…

If you’ve read my original Best Breakfast post, you probably know that I love a big bowl of nutritious goodness to start my day. But what if you’re vegan, or doing the Whole30? If you’ve read some of my other content, you know I’ve practiced and respect many special diets. One Pan – Double Duty! Pan-Asian Chicken Thighs

    November 5, 2020 / 3 Comments

What dinner can be made using only one pan and contains elements of both Korean and Thai cuisines? One-Pan-Asian Chicken Thighs … with roasted vegetables! Add a chopped salad, and dinner is served. Why One-Pan Asian Chicken? I found a great-looking recipe for Korean chicken thighs, but was missing a few of the key ingredients – honey and gochujang, to name a few. I used the ingredients I had, including raisins, applesauce, and Thai chili paste. The result was something probably a lot different than the recipe I found online, but the family raved! So, I’m going to share it with you.

Amazing Chicken Salad in Under 30 Minutes

    August 19, 2020 / 0 Comments

Remember the chicken salad of your youth – or, the chicken salad found in the pre-packaged deli section of your local convenience store? I’ll bet it’s a mash-up of pulverized chicken bits, eggs, and mayonnaise … maybe some salt, too. Is it tasty? Maybe. Inspiring? Not really. Visually appealing? No way – it looks like vomit. The Case For Chicken Salad If you like the idea of chicken salad but are looking for something a little more interesting than the chicken-egg-mayo combination, this post is for you! We – meaning I’ve prepared and my family has suffered, er, “tested” – have tried many chicken salad recipes. Curried chicken salad, chicken…
